Ingredients:

Directions:

  1. Preheat your oven to 325°F (165°C). Thoroughly grease and flour a 12-cup bundt pan or use a baking spray with flour.
  2. In a large bowl with an electric mixer (or stand mixer), beat the softened butter and sugar together until light, fluffy, and pale yellow (about 5 to 7 minutes).
  3. Add the eggs one at a time, beating well after each addition. Stir in the lemon extract.
  4. On low speed, gradually add the flour in alternation with the 3/4 cup of 7-Up soda. Mix just until smooth.
  5. Pour the thick batter evenly into your prepared bundt pan. Bake at 325°F for 1 hour to 1 hour and 20 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan on a wire rack for about 10 to 15 minutes. Invert the cake onto a serving plate or wire rack to cool completely.
  7. Whisk together the powdered sugar, fresh lemon juice, vanilla extract, and cold 7-Up until smooth. Drizzle or spoon the glaze generously over the cooled cake.
